
What do you all like to add to your quesadillas besides cheese?
Been experimenting more with veggie-forward fillings lately with things like squash blossoms (flor de calabaza), zucchini, etc. Tried a squash blossom quesadilla recently and it was delicious!

I usually top with pico and avocado and sometimes sour cream or crema, fillings you could try mushrooms, onions, or peppers if you want more veggie-forward, but chorizo or other meats work too.
