Ingredients:

– 500g Minced Beef
– 1 Cup Long Grain Rice (washed)
– 60g x Chilli Con Carne Mix (dry seasoning)
– 1 x Can Kidney Beans, drained and rinsed
– 600g x Canned Chopped Tomatoes
– 1 Small Onion. diced
– 600mL Beef or Vegetable Stock
– Grated Cheese
– Salt & Pepper, to taste
– Optional toppings: sour cream, coriander, avocado

Method

1. Preheat oven to 200°C (fan-forced). In a large baking dish, add the minced beef, rice, chilli con carne mix, beans, chopped tomatoes, onion, stock, salt and pepper. Mix everything together until evenly combined.
2. Cover the dish tightly with foil and bake for 40-50 minutes, until the rice is tender and the beef is fully cooked. (if it needs longer, or more stock add it)
3. Remove the foil, stir gently, then sprinkle the grated cheese evenly over the top. Bake uncovered for 10–15 minutes, until the cheese is melted and slightly golden.
4. Serve straight from the dish with toppings you’d like.
