Crispy Cheesy Beef Taquitos



These Crispy Cheesy Beef Taquitos are golden, crunchy, and stuffed with a savory, spiced beef filling and melty mozzarella. Served with a fresh, creamy avocado parsley sauce, they’re perfect for dipping, snacking, or impressing friends at your next gathering!

Ingredients

➡️ For the beef filling
250 g ground beef
1 medium onion, finely chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp salt
½ tsp black pepper
½ tsp chili flakes
½ tsp smoked paprika
1 tbsp tomato paste
3 tbsp strained tomatoes
2–4 tbsp water, as needed

➡️ For assembling
8 small flour tortillas
250 g mozzarella, grated
Oil for frying

➡️ For the avocado parsley sauce
1 ripe avocado
2 tbsp fresh parsley
2 garlic cloves
Juice of ½ lemon
1 tbsp olive oil
Salt and pepper to taste
A little water, as needed

INSTRUCTIONS

* Heat a pan with a drizzle of oil over medium-high heat, sauté chopped onion for 3 minutes until soft and translucent.
* Add ground beef, cook 5–6 minutes, breaking it apart until browned and cooked through.Season the beef – Stir in garlic powder, onion powder, paprika, salt, black pepper, chili flakes, smoked paprika, tomato paste, and strained tomatoes; cook 1 minute.
* Add 2–4 tbsp water and simmer 2–3 minutes until slightly thick; remove from heat and cool slightly.
* Blend avocado, parsley, garlic, lemon juice, olive oil, salt, and pepper until smooth; thin with water to reach pourable consistency.
* Lay a tortilla flat, sprinkle a layer of grated mozzarella down the center of the tortilla, spoon the beef mixture on top, then add a little more mozzarella over the beef and roll tightly into a log; repeat with remaining tortillas.
* Heat neutral oil in a pan over medium heat, place taquitos seam-side down, fry turning occasionally until golden and crispy, 3–4 minutes per batch.
* Transfer fried taquitos to paper towels to remove excess oil.
* Serve hot with avocado parsley sauce on the side or drizzled on top.

  2. Taquitos are about finger sized crunchier and are on the same level as hotdogs.. usually served smothered in pico and cheese… Flautas are made with flour tortillas and are larger with more meat stuffed inside.. they feel more like a well cooked meal..

  3. Lets not blend avocados please. They are literally by nature mashable. Tastes way better in a mortal and pestle too.

  4. Bro that are not even tacos, it's more like a burned burrito, tacos dorados doesn't use flour tortillas, they are made with corn tortillas.
