*🥟 Sooji Momos Recipe*
Ingredients
*For Dough:*
* 1 bowl semolina (sooji)
* ½ teaspoon ghee
* Salt to taste
* Milk (as required)
*For Filling:*
* 1 capsicum (finely chopped)
* 1 carrot (finely chopped)
* Cabbage (finely chopped)
* 1 onion (finely chopped)
* 250 g paneer (grated)
* 1–2 green chilies (finely chopped)
* 1 teaspoon ginger (finely chopped)
*Spices & Sauces:*
* Red chili powder (as per taste)
* Salt (as per taste)
* ½ teaspoon black pepper powder
* Garam masala (optional)
* ½ teaspoon soy sauce
* ½ teaspoon green chili sauce
* 1 teaspoon ketchup
*🥟 Method*
*Step 1: Prepare Dough*
1. First, lightly grind the semolina.
2. Transfer it to a bowl.
3. Add ghee, salt, and milk.
4. Knead into a soft dough.
5. Cover and let it rest for 10–15 minutes.
*Step 2: Prepare Filling*
1. Finely chop all vegetables (capsicum, carrot, cabbage, onion).
2. Grate the paneer.
3. Mix paneer, vegetables, onion, green chilies, and ginger.
4. Add spices: red chili powder, salt, black pepper, and garam masala (optional).
5. Add sauces: soy sauce, green chili sauce, and ketchup.
6. Mix everything well.
*Step 3: Shape Momos*
1. Knead the dough again for 1–2 minutes until smooth like maida.
2. Make small balls (loai).
3. Roll them into thin circles.
4. Use a bowl or mold to cut perfect round shapes.
5. Add filling and fold into momo shapes.
*1. Boil water in a pan or kadhai.*
2. Place a greased steaming rack or jali.
3. Arrange momos on it and lightly grease them.
4. Steam for 5–7 minutes.
5. Remove once cooked.
*🌶️ Spicy Momos Chutney*
*Ingredients:*
* 2–3 tomatoes
* 7–8 dried red chilies
* Coriander stems
* Finely chopped garlic
* Salt & black pepper (to taste)
* ½ teaspoon vinegar
* ½ teaspoon soy sauce
* ½ teaspoon ketchup
* Little ghee
*Method:*
1. Boil tomatoes, red chilies, and coriander stems for 5 minutes.
2. Let them cool and grind into a paste.
3. Heat ghee in a pan and add chopped garlic.
4. Add the ground mixture.
5. Add salt, black pepper, vinegar, soy sauce, and ketchup.
6. Cook for 5 minutes.
*✨ Serving*
* Garnish momos with peri-peri masala and fresh coriander.
* Serve hot with spicy chutney.
