After years of putting it off, I finally made tamales from scratch today(and yesterday) made Tamales Rojos de Puerco. Braised the pork shoulder in a chile Colorado type sauce yesterday, and made the masa today. Served them with Spanish rice and Pineapple sprinkled with Tajine. Best tamales I’ve ever had. Marcus ate 6 of them.

looks good! Pineapple is an odd choice though. Piña con tajín is more like a snack than a side dish
