Koren Spicy Maggi :-

*Ingredients*
– Maggi noodles: 2 packs (discard the taste-maker)
– Water: for boiling
– Ghee: 1 tbsp + 1 tsp
– Green onion: 2 stalks, finely chopped
– Garlic: 3–4 cloves, finely chopped
– Red chili powder: 1 tsp (Korean gochugaru if you have it)
– Garam masala: ½ tsp
– White sesame seeds: ½ tsp
– Chili flakes: ½ tsp
– Tomato ketchup: 1 tbsp
– Chili sauce: ½ tbsp
– Peri-peri masala: ½ tsp
– Salt: to taste

*Method*
1. Boil Maggi until about 80% done, strain, rinse with cold water, and toss with 1 tsp ghee so it doesn’t stick.
2. In a bowl, combine green onion, garlic, red chili powder, garam masala, sesame seeds, chili flakes, ketchup, chili sauce, and peri-peri masala.
3. Heat 1 tbsp ghee until hot, then pour it over the spice mix—it should sizzle. Stir well.
4. Add the boiled Maggi and toss vigorously. Adjust salt and serve hot.

*Tip*: for a more Korean touch, mix ½ tsp gochujang + ½ tsp soy sauce + ½ tsp sugar into the sauce, and finish with extra sesame seeds and green onion. Ready in ∼5 minutes!
