Jamaican Style Chilli Con Carne 🇯🇲🔥

✨ Ingredients (Chilli):
• 500g beef mince
• 1 tbsp oil
• 1 onion (diced)
• 1 red pepper (diced)
• 1 tbsp garlic paste
• 2 tbsp green seasoning
• 2 tbsp jerk seasoning
• 1 tbsp all-purpose seasoning
• ½ tsp cayenne pepper
• 1 tbsp tomato purée
• 1 cup chopped tinned tomatoes
• 1 beef stock pot
• 1 tin red kidney beans (drained)
• 1 cup water (add more if needed)
• ½ tsp black pepper
• Salt to taste
• Small piece of dark chocolate
• Fresh thyme

🌶 Pickle De Gallo:
• Tomato (diced)
• Red onion (diced)
• Garlic paste
• Sugar
• Salt
• Olive oil
• White wine vinegar

🔥 Method:
1️⃣ Brown mince in oil until nicely coloured, remove and set aside.
2️⃣ In the same pan, add onion and pepper and cook until soft.
3️⃣ Add garlic paste, jerk seasoning, all-purpose seasoning, cayenne and green seasoning, stir well.
4️⃣ Add tomato purée, then return the mince to the pan and mix through.
5️⃣ Add chopped tomatoes, beef stock and water, then stir.
6️⃣ Add kidney beans, black pepper, thyme and a small piece of dark chocolate.
7️⃣ Cover and simmer on low for at least 1 hour, stirring occasionally until rich and thick.

🥣 Serve with:
Fluffy white rice, crunchy nachos and fresh pickle de gallo.
