1980 Arizona Community Cookbook: Chili Recipe & Jiffy Cornbread Waffles



In today’s video I make CHILI from this 1980 Community Cookbook titled CALICO CACTUS COOKBOOK with recipes by The Scottsdale Girls Club Auxiliary. To go with it, I made Cornbread Waffles using a Jiffy mix.

I was intrigued by the addition of apple to the chili. The apple flavor did not stand out but blended in nicely. We liked the chili and my husband thought the cornbread waffle went well with it, and broke pieces of the waffle into his bowl of chili.

I called the Jiffy Mix company and asked if I should add more milk to make the cornbread into waffles. She was very helpful and I include the recipe below.

Recipes ~

CHILI (pg. 30, submitted by Stoney Breyvogel)
1 large Onion, chopped
1 Green Pepper, chopped
1 Pippin Apple, chopped (I substituted a Pink Lady apple)
2 cloves Garlic, minced
1 1/2 pound Coarse Ground Round
1 (28 oz.) can Tomatoes, chopped
½ cup Water
1 Tablespoon Chili Powder
¼ tsp. Cayenne Pepper
½ tsp. Black Pepper
2 ½ tsp. Oregano
1 tsp. ground Cumin
2 ½ tsp. Salt
2 (15 oz.) cans Pinto (chili) beans with juice
In Dutch oven sauté onion green pepper, apple and garlic in oil for about 5 minutes. Add meat and brown. Add remaining ingredients and simmer, covered, for 1 ½ to 2 hours. Serve in bowls with chopped onions a tossed salad and corn bread. Yield 6 to 8 servings.

Note ~ I saved money by buying a whole round roast and cutting it into portions to use in various recipes. I thawed a 1½ lb. pkg. and then was able to use my KitchenAid Food Grinder attachment to grind it into the “coarse ground round” requested in the recipe.

JIFFY CORNBREAD WAFFLES
(I am not affiliated with the Jiffy Mix company, but I called to ask how to make their corn muffin mix into waffles)

1 pkg. JIFFY Corn Muffin Mix (I used the Honey version)
1 Egg
½ cup Water
Stir ingredients together. Batter will be slightly lumpy.
[Instead of a standard waffle iron, I used my Belgian waffle maker. This recipe made two Belgian-sized waffles]
