This juicy spatchcock chicken marinated and glazed in Mellow Yellow Ultimate Chilli Dressing is bold, spicy and absolutely loaded with flavour.

💛Hero dressing: Mellow Yellow Ultimate Chilli Dressing
Ingredients
1 medium whole chicken (spatchcocked)
200ml Mellow Yellow Ultimate Chilli Dressing
3 tbsp soy sauce
4 garlic cloves, crushed
5cm piece fresh ginger, grated
For the smashed cucumbers:
2 large cucumbers
Pinch of salt
2–3 spring onions, sliced
1–2 red chillies, finely sliced
Mixed black and white sesame seeds
2–3 tsp Mellow Yellow Ultimate Chilli Dressing
To serve:
Extra Mellow Yellow Ultimate Chilli Dressing (for drizzling over cucumbers)
Extra spring onions and sliced chillies
Fresh coriander, leaves picked
Method
1. Spatchcock the chicken: Place the chicken breast-side down on a board. Cut along both sides of the backbone and remove it, then turn over and press firmly to flatten.
2. Marinate: In a bowl, mix the Ultimate Chilli Dressing, soy sauce, garlic and ginger. Rub all over the chicken, coating well. Cover and refrigerate for 2–3 hours.
3. Cook the chicken: Preheat the air fryer to 180°C (or oven to 200°C / 180°C fan). Cook the chicken skin-side up for 35–40 minutes, then turn and cook for a further 15–20 minutes, until deeply golden, crisp and cooked through to the bone. Brush with extra dressing halfway through for a glossy finish.
4. Prepare the smashed cucumbers: Lightly smash the cucumbers, then break into bite-sized pieces. Place in a bowl, sprinkle with salt and leave for 10–15 minutes to draw out excess moisture. Drain well, then toss with Ultimate Chilli Dressing, spring onions, sliced chillies and a sprinkle of sesame seeds.
5. Assemble the platter: Pile the smashed cucumbers onto a large serving platter, then place the cooked chicken over.
6. Finish and serve: Drizzle a little extra Ultimate Chilli Dressing over the cucumbers. Scatter over extra spring onions, chillies and fresh coriander leaves. Serve as a sharing platter, or carve the chicken into portions and serve individually with the smashed cucumbers.
Notes:
💛Marinating longer deepens flavour, but even 30 minutes works well.
💛Salting and draining the cucumbers keeps them crisp and fresh.
💛Keep the final drizzle on the cucumbers for balance and brightness.
