🟡 STEP 1 — Crispy Veg Kebab
Ingredients:
• ¼ cup cabbage, finely chopped
• ¼ cup cauliflower, finely chopped
• ¼ cup carrot, finely chopped
• 1 tsp salt
• ¼ cup paneer, grated
• 2 small boiled potatoes, grated
• 1 tbsp ginger, finely chopped
• 1 tbsp garlic, finely chopped
• 1 tbsp green chilli, finely chopped
• 1 tbsp schezwan sauce
• 1 tsp soy sauce
• ½ tsp vinegar
• ½ tsp chilli flakes
• ½ tsp salt
• 3 tbsp maida
• 3 tbsp cornflour
Method:
1. In a bowl mix cabbage, cauliflower and carrot with salt.
2. Add paneer, potatoes, ginger, garlic and green chilli.
3. Add schezwan sauce, soy sauce, vinegar, chilli flakes and salt.
4. Mix in maida and cornflour to form a firm dough.
5. Shape into long cylindrical sticks (hot dog size).
6. Shallow fry until golden and crisp.
7. Drain and keep aside.
🔥 STEP 2 — Dragon Schezwan Manchurian Sauce
Ingredients:
• 1 tbsp oil
• 1 tbsp garlic, chopped
• 1 tbsp onion, chopped
• 1 tbsp spring onion whites
• 2 tbsp schezwan sauce
• 1 tbsp soy sauce
• 2 tbsp ketchup
• 1 tsp vinegar
• ½ tsp sugar
• ½ tsp chilli oil
• ½ tsp black pepper
• ½ tsp cornflour + ¼ cup water
Method:
1. Heat oil in a pan.
2. Sauté garlic, onion and spring onion whites.
3. Add schezwan sauce, soy sauce, ketchup, vinegar, sugar, chilli oil and pepper.
4. Pour in the cornflour slurry and cook till thick and glossy.
5. Toss the fried veg sticks in the sauce until well coated.
6. Finish with spring onion greens.
🧄 STEP 3 — Desi Chinese Garlic Mayo
Ingredients:
• ½ cup mayonnaise
• 1 tbsp schezwan sauce
• ½ tsp soy sauce
• 1 tsp garlic paste
• Pinch black pepper
• 1 tsp chilli oil
Method:
1. Whisk everything until smooth and glossy.
2. Adjust consistency with a little water if needed.
🥗 STEP 4 — Chowmein Crunch Slaw
Ingredients:
• ½ cup shredded cabbage
• 2 tbsp carrot julienne
• 2 tbsp crushed fried noodles
• 1 tbsp mayonnaise
• 1 tsp schezwan sauce
• 1 tbsp chilli oil
• Pinch salt
• Pinch pepper
Method:
1. Mix all ingredients and keep chilled until assembly.
🌭 STEP 5 — Assembly
Ingredients:
• Hot dog buns
• Butter
• Chilli powder
• Spring onion greens
Method:
1. Slice buns and toast in butter with a pinch of chilli powder.
2. Place dragon schezwan veg kebab inside.
3. Top with chowmein crunch slaw.
4. Drizzle garlic schezwan mayo generously.
5. Finish with spring onion greens.
