Chili Mac | Cooking w/Jose pt 1

Recipe/Ingredients | Serves 6-8
Serving size: 1cup

•Ground Beef (80/20) 1lb
•Elbow Macaroni 8oz
•Red Onion 1/2
•Jalapeño 1
•Rotel Diced Tomatoes 1cn
•Chili Powder 2tbsp
•Paprika 1tbsp
•Dried Oregano 1tbsp
•Tomato Bouillon 1tbsp
•Queso Blanco Cheese 8-10oz
•Shredded Mexican blend cheese 1-2oz
•parsley for garnish

1. dice onions & jalapeño, sauteed in pan until onions are translucent.

2. Cook ground beef until brown

3. mix 2cups of pasta water with 1tbsp of Tomato bouillon, add into pan with ground beef & veggies. Add 1 can of diced tomatoes, seasonings & 2oz of diced Queso Blanco Cheese.

4. Mix until fully incorporated and simmer on low until cheese is melted and sauce thickens.

5. Add elbow macaroni into sauce. ensure to completely coat the pasta with the meat sauce

6. Spray pan with Olive oil pan spray & put Chili mac in pan. bake in oven at 400° F for approximately 20min or until cheese forms a golden crust on top.
