In this video I show y’all how to make a delicious white chicken chili in the crock pot. This chili recipe is as simple as throwing all of the ingredients in the crock pot and walking away. No pre-cooking at all! White chicken breasts and white beans in a slightly spicy seasoning blend then slow cooked until the chicken is tender and the sauce is creamy. Served with lime slices and garnished with white cheddar cheese and fresh cilantro.
Shopping List:
1 lb. boneless chicken breasts or breast tenders.
1 can Great Northern Beans (also know as Navy beans)
1 small can green chilies (I use mild)
1/2 sweet onion, diced
1 1/2-2 c chicken brother or stock
1 t minced garlic
1/4 t each of cumin, dried oregano, cayenne
1 t Kosher salt
1/2 t white pepper
1/4 cup fresh cilantro, more for garnish, roughly chopped
Lime slices
White cheddar cheese
Diced tomatoes
Directions:
Drain and rinse the beans
Add all the ingredients, except cilantro and lime slices, to the crock pot. Mix to combine. Cover and cook 5-7 hours on low or 5-7 hours on high. KNOW YOUR SLOW COOKER! SOME COOK FASTER THAN OTHERS. CHECK AFTER 2 1/2 HOURS FOR CHICKEN DONESNESS.
When the chicken is done (internal 165 degrees), remove and either cut into bite-size pieces or shred then return to the crock pot. Remove 1 cup of the beans and mashed roughly then return to the crock pot. This helps to thicken the chili. Add the butter and cilantro. Stir, cover and cook for 15 more minutes.
Serve and top with more cilantro and garnish with diced tomatoes, shredded white cheddar cheese and lime slices.
