In the first episode of Stan’s Table we recreate cowboy chili from Red Dead Redemption 2 and try answering a strange question — should you add coffee to your chili or not? (spoiler — maybe)

1 kg of beef or wild game
1 onion
2 chili peppers
5 cloves of garlic
1 tsp of cumin
1 tsp of dried oregano
2 heaped teaspoons of smoked paprika
A pinch of salt and black pepper
800g of canned plum tomatoes
400g of canned beans
400ml of black coffee or water
Fluffy rice, potatoes or bread as a side dish
Cheese or sour cream for serving
1. Cut meat into chunks or take ground meat, it’s a great option as well.
2. Pour some vegetable oil in a hot pot and brown the meat. Add a medium-sized onion, peeled and diced, and cook for 5-7 minutes.
3. Cut open the chilies, deseed them (or leave the seeds if you like it hot) and add to the meat.
4. Add cumin, oregano, smoked paprika, a pinch of salt and pepper. Stir.
5. Add canned tomatoes breaking them up with a back of a spoon and beans. Stir once again.
6. Pour in black coffee or water (choose the one you prefer).
7. Cover with a lid and simmer for around 2 hours on low heat, stirring occasionally.
8. Use 2 forks or a potato masher to break the meat. Leave to simmer without the lid until meat is tender. Taste for seasoning, add some chili powder if you want more heat.
9. Serve from the pot with fluffy rice, potatoes or bread. Add cheese and sour cream on top. Enjoy!
