1960HikerDude teams up with Chef Johnny Stewart of Texas Style Cuisine to show you how to make authentic Texas style chili over an open fire.

Texas Style Chili
4lbs Chili meat
3 Onions, diced
2-4 Poblano peppers roasted & dice (bell or Anaheim will work)
1 28oz can petite diced tomato
1cup Tomato paste
8t bl Chili powder
4tbl Cumin
2tbl Black pepper
2tbl Garlic
1tbl Salt
1tsp Mexican oregano
1 ½ pint Knorr tomato bullion w/chicken
SautƩ onions until starting to turn translucent.
Add chili meat and brown.
Add peppers, diced tomatoes and paste, while stirring.
Add seasonings.
Add tomato base.
Bring mixture to a boil and then reduce heat and simmer of 1 hour.
If mixture needs to be thickened add a slurry made of cool water and cornmeal. You can also use a flour slurry or roux.
