Ingredients Needed for this recipe:
For the Chili:
– Chili Seasoning (see recipe below)
– 1 lb ground beef/ground chuck
– 1/2 lb ground Italian sausage
– (1) 28 oz can of crushed tomatoes
– (1) 28 oz can of diced tomatoes
– (1) large diced green pepper (any bell pepper will do)
– (1) large diced onion
– (1) 15.5 oz can kidney beans (omit if you don’t like beans in your chili)
– Shredded cheddar cheese and chopped cilantro for garnish
– 2 chopped corn tortillas
– 1 oz El Yucateco Red
– 1 oz El Yucateco Black Label Reserve
For the Chili Seasoning: (place into a bowl and mix well)
– 2 tablespoons chili powder
– 2 teaspoons ground cumin
– 1/2 teaspoon garlic powder
– 1 teaspoon onion powder
– 2 teaspoons salt
– 1/2 teaspoon black pepper
Instructions:
Always wash your hands before prepping any food recipe!
In a medium-large pot (you can use non-stick or cast iron but be sure to coat the cast iron with some oil first, add 1 lb ground beef and 1/2 pound ground Italian sausage using medium heat. Mince and mix thoroughly until it has rendered some fat and browned. Drain 1/2-3/4 of the grease and add 1/4 of your made chili seasoning. Mix well, cover and allow to simmer for a few minutes. Add onion, pepper, another 1/4 of your chili seasoning along with a small amount of water, mix well and allow to cook under low heat covered until onions have become translucent and softened. Next, add both the crushed and diced tomatoes, kidney beans (if wanted), another 1/4 of your chili seasoning, EL YUCATECO RED & EL YUCATECO BLACK LABEL RESERVE SAUCES (1 oz each approximately) mix, cover and allow to simmer under low heat for 2-4 hours, (your preference), stirring occasionally. For the last portion of the cook, add the chopped tortillas and the remaining chili seasoning, stir, cover and allow to cook for 30-45 minutes stirring occasionally. NOW SERVE with Cheddar Cheese, Cilantro and ENJOY!
