Cornbread and Chili Recipe (Sprucing Up Your Pantry)

Some days you don’t want to go grocery shopping and you end up rummaging through your cabinets for some ingredients. Tonight is a chili and cornbread night, but I want to spruce it up!

For the cornbread:
Cook according to package: 1 package mixed with 1 egg, 1 tablespoon milk and 1/3 cup of milk. But instead of milk I used sour cream. I added a tablespoons of chives and seasoned with garlic salt and pepper. Instead of making 6 muffins per package, I made 5 bigger muffins. Bake at 375 degrees F for 15-18 minutes. I check with a toothpick for readiness.

For the chili:
I sautéed a quarter cup of onions, 1cup of shredded rotisserie chicken, and 1 tablespoon of chives with 1 can of chili. I used chicken chili in the recipe. I seasoned with garlic salt and pepper & topped it with shredded cheese.

Serve chili with the cornbread and enjoy your spruced you pantry meals. 😋
