Ingredients:
Andy (Eggs) 6-7
Oil 1-2 tbsp
Pyaz (Onion) Chopped 1 large
Turai (Ridge gourd) 250 g
Hari Mirch (Green Chili) 2-3 chopped
Namak (salt) ¼ tsp or to taste
Lal mirch (Red chili) powder ¼ tsp
Lal mirch (Red chili) crushed ½ tsp
Haldee (Turmeric powder) ¼ tsp
Tamater (Tomato) slice 1 large
Garm masala powder (All- spice powder) ¼ tsp
Fresh Coriander 1 tbs chopped

Directions:
In a pan add oil, onion, and fry until light golden.
Now add ridge gourd, Green Chili, salt, red chili, red chili crushed, turmeric powder, and allspice powder, mix well, and cook for 3-4 minutes.
Add tomatoes and spread evenly.
Now add eggs one by one and cook on low flame for 2-3 minutes then cover and steam cook until eggs are done.
Sprinkle chopped red chili, fresh coriander & serve.
