In this video I show y’all how to make pulled pork chili with left over pulled pork. If you have leftover pulled pork and wondering what to do with it, this is a delicious option. This pulled pork homemade chili recipe is easy to make and comes together in less than 1 hour.
Shopping List:
1 lb. leftover pulled pork, warmed and shredded
1 small sweet onion, diced
1 small green bell pepper, diced
1 tbsp. tomato paste
1 28 ounce can crushed tomatoes
Chili beans, drained
2 tbsp. chili powder
1 tsp. cayenne pepper
1-2 tsps. kosher salt
1 tsp. cumin
1 tbsp. paprika
1 tsp. garlic powder
1 tsp. white sugar
2 cups vegetable broth
1 tbsp. canola or vegetable oil
Shredded cheddar cheese, green onions and sour cream
Directions:
Warm the leftover pulled pork in the oven for about 15-20 minutes at 250 degrees or 1-2 minutes in the microwave. Then shred with two forks. Set aside.
In a pot over medium heat sauté the onions and bell pepper until soft, about 5 minutes.
Add the pulled pork, seasonings, including the sugar, chili beans and vegetable broth. Stir and simmer on medium low to low for 30-45 minutes.
Serve with toppings of cheese, green onions and sour cream.
