Real Texas chili is made with beef chuck, no beans. There are several variations, but the basics are simple. I prefer a recipe written by the late, great Craig Claiborne, considered an aficionado on chili and often a judge at chili cook-offs. This chili can be cooked in a pot on the stove, or cooked slowly in a crock pot, or in my case, in my Sun Oven, using no fossil fuels. I prefer a mild chili; you can make your chili as spicy hot as you like. The stove-top recipe is linked at the end of the video.
