
I recently got my hands on several large batches of dried Chinese chilies of different varieties (Guizhou Longhorns, Erjingtao, Xindai Bullet, etc.), and I was trying to figure out the best way to taste them to learn the different flavour profiles. After some careful consideration, I think I want to make a batch of “Franks” style hot sauce with each.
I was considering a recipe like the one from Chili Pepper Madness, but I’m not sure the shelf-stability for Method 1, only using a tablespoon or so of vinegar. On the other hand, I’m not sure if I want to boil the vinegar like Method 2.

So, I figured I’d ask the experts here at /r/spicy. What’s your go-to simple dried chili hot sauce recipe? I am really looking for something basic that highlights the chili flavours so I can customize a recipe with other ingredients that match them later.
