As the weather is getting colder and the risk of falling sick (especially with the worry of the ongoing pandemic!) is upon is, I have decided to share with you 4 healthy soup recipes to boost our immune system! If you are dieting, adding cream is not neceessary, it is just an enhancer of the taste.

Ingredients:
Creamy Mushroom:
1 tsp butter
1 chopped onion
3 tbsp chopped spring onion
2 cloves crushed garlic
1 and half tbsp flour
400g sliced mushrooms
250ml vegetable stock
250ml boiled water
Half tsp sugar
Half tsp tomato paste
1 tsp black pepper
1 tsp table salt
100ml cream
1 tsp thyme
Roasted mushrooms (optional)
Healthy spinach:
1 tsp butter
Half chopped onion
2 cloves crushed garlic
2 tsp corn flour
1 grated (boiled potato)
250ml vegetable stock
200g spinach
250ml boiled water
Half tsp black pepper
Half tsp table salt
250ml milk

Beetroot and Carrot:
1 tsp butter
1 bay leaf
4 tbsp chopped leek
2 crushed garlic
1 cup chopped beetroot
2 chopped carrots
1 cut up tomato
Half cup white beans
250ml vegetable stock
250ml boiled water
Salt
Half tsp black pepper
Half tbsp lemon juice
Chili Butternut Squash Soup:
2 crushed cloves of garlic
1 bay leaf
4 tbsp chopped leeks
1 chopped red chilli
1 cup chopped butternut squash
2 chopped carrots
1 cup potato
Half tsp salt
Half tsp black pepper
