Thanksgiving Red Chile Gravy

Ingredients:
1. 1 ½ – 2 pounds pork loin roast
2. 1 quart water
3. 1 teaspoon oregano
4. 1 ½-teaspoon salt (2 portions)
5. 2 tablespoons canola oil
6. 2 tablespoons flour
7. 1 cup reserved broth
8. 1 cup water
9. 2 cups Chile Carribe
10. 1 teaspoon garlic

Directions:
Cook pork roast in a pressure cooker for 2 ½ hours along with 1 teaspoon salt and oregano. Once cooked, shred the meat and set it aside. Heat oil on medium heat for about a minute, next add flour and cook for another minute. Add chile carribe, salt, and garlic and stir continuously for a couple of minutes, then add broth, water and continue stirring with a whisk until it is smooth. Once it starts to boil, you will know if you need to add any additional water. Now add the meat, and turn heat down to a simmer. Cook on low for about 20 minutes. Serve immediately, or store in the refrigerator and reheat when ready to eat.
