WW Recipe Tacos and Green Chili Stew (caldillo) in the Instant Pot. Recipe below

We are going super healthy in these two Mexican dishes without losing any of the flavors!

I don’t count points for the oil in this recipe because it makes 12 tacos and at least 4 servings of the caldillo (green chili stew). It’s way less than a point per serving.

If you decide to add the homemade skinny chorizo to the caldillo make it a day in advance so the flavors can meld. I love this chorizo. It’s great to add to so many Mexican dishes for an extra layer of flavor. I add it to soups, stews, beans, chicken, etc. it’s really versatile 😊

1 tablespoon oil. 4 points
1 onion chopped
12 to 14 ounces chopped green chili. I used Bueno brand frozen roasted and chopped green chili and defrosted it before use. Canned chili and fresh roasted chili work great as well
1 tablespoon oregano
1 teaspoon cumin
2 teaspoons salt, or to taste
1 teaspoon pepper, or to taste
1 tablespoon canned chipotle chili sauce or 2 teaspoons dried chipotle chili powder
4 large or 6 medium boneless, skinless chicken breasts
2 cups green enchilada sauce. 7 points. Less than 1 point per serving based on 9 servings.
1 cup chicken broth
12 ounces cauliflower rice for the green chili chicken stew. Garnish with plain, nonfat Greek yogurt, red pepper flakes and cilantro

I use Mission brand extra thin corn tortillas for the tacos. 4 points for 3 tortillas. Garnish with lettuce, tomatoes, fat free cheese, plain nonfat Greek yogurt, cilantro and Herdez brand guacamole salsa. 1 point per tablespoon. Use your favorite garnishes!

Must be made a day in advance and refrigerated overnight for the flavors to meld. O points
2 pounds extra lean ground chicken
1/4 cup red wine vinegar
A 3 ounce package Tampico brand chorizo mix. I get mine at my local supermarket, but you may have to go
to a specialty store or Amazon to find chorizo seasoning mix)
