Weight Ingredients
10oz Olive Oil
7oz Canola Oil
3oz Shallots
1oz Garlic
0.5oz Serrano Chile
6g Chile Japones
11g Chile De Arbol
Pinch Pepper
1oz Chile Flakes
32g Rocotto Paste
31g Lime Juice
50g Soy Sauce
10g Kosher Salt
Instructions:
1. Heat oil at high heat
2. First add shallots, garlic, and serrano chili
3. When oil starts bubbling add chili japones and a dash of pepper
4. Turn heat to medium heat and add chili flakes
5. Combine rococo paste, lime juice, and soy sauce together add to pot
6. Once bubbles change color take off stove you are never browning ingredients
7. Let cool down and add salt
8. Blend for 2 minutes
9. Let cool down refrigerate and enjoy
