1 small onion, chopped
7-8 stalks celery, chopped
1 cup carrots, chopped
2 cloves garlic, minced
1/3 cups tomato sauce
2 cups frozen sweet corn kernels
2 cans red kidney beans
1 jar mild salsa (2 cups)
1 box vegetable stock (900 ml)
Sauté onions til lightly brown.
Add celery, carrots and minced garlic.
Sauté for a minute.
Add cooked ground chicken (recipe below), corn, and tomato sauce.
Add drained and washed red kidney beans, a jar of salsa and a bid of vegetable stock.
Mix and let it simmer.
Add hot sauce, Worcestershire sauce, salt and pepper.
Cover and and it simmer for at least 30 minutes.
Serve with cilantro, green chilies, avocado, shredded cheese, tortilla chips and lime.
Minced Chicken
3 lbs ground chicken
Salt
1/2 teaspoon turmeric
1 teaspoon red chili powder
1 tablespoon ginger garlic paste
1 1/2 teaspoons ground cumin
1 teaspoon coriander powder
2 medium onions, diced
1/3 cups oil
1/2 cup tomato sauce
Mix ground chicken, turmeric, red chili powder, ginger garlic paste, ground cumin, and coriander powder together and let it sit for at least 30 minutes.
Sauté onions until lightly brown.
Add marinated ground chicken. Break the ground chicken and cook on medium high until it’s no longer pink.
Add tomato sauce, mix and cover.
Cook until the oil separates, remover from heat.
