Smoked Pork Chili to Warm Your Soul

This smoked pork chili is an excellent alternative to your typical ground beef chili. The pork is spicy, smoky, and luxuriously tender.

My version has the following ingredients:

3.5 POUNDS | 1.5 K PORK BUTT CUT INTO 1″ CUBES
1.5 CUPS | 225 G DICED ONION
1 CUP | 150 G DICED GREEN PEPPER
1 CUP | 150 G DICED JALEPENO WITH MOST OF THE SEEDS REMOVED
3 CLOVES GARLIC THINLY SLICED
2 TSP | 11 G SALT
2 TSP | 11 G PEPPER
2 TSP | 11 G CHILI POWDER
1 TSP | 6 G GREEK SEASONING
1/2 TSP | 3 G CUMIN
1/2 TSP | 3 G CORIANDER
1 TSP | 6 G CHIPOTLE POWDER
2 Quarts CHICKEN STOCK

Smoke the cubed pork at 300 degrees F for approx 2 hours and then add to the chili stock and simmer until the pork is fall apart tender.
