Mexican Chicken Chili Soup I Best way to use leftover chicken

Spiced with cumin, pepper and green chili, this soup is unique in its own way. It’s my favorite thing to make when I have leftover chicken shreds.

INGREDIENTS

1 Tbsp coconut oil/olive oil
4 spring onions (scallions)
2 cloves garlic
1 tsp cumin powder
1 tsp white pepper powder
1/2 tsp dried oregano
2 green chilies
1 sweet potato
1 cup cauliflower florets
2 cups cooked shredded chicken
1 can full fat coconut milk
1 cup chicken stock
1 tsp salt
