Ingredients
3 tsp of olive oil
1 yellow onion, chopped
1 tbsp of minced garlic
1 medium red bell pepper chopped (optional)
1 pound extra lean ground turkey, ground beef or chicken
1 McCormick chili powder or 4 tbsp of Chilli Powder
2 teaspoons ground cumin
1 tbsp of Paprika
1 tbsp of Sugar
1/4 tsp Cracked Black Pepper (add to taste)
1/4 teaspoon cayenne pepper
1 teaspoon salt, plus more to taste
1 small can of tomato paste
2 small cans of tomato sauce
1 cans dark red kidney beans, rinsed and drained
8oz of water (add more if needed)
{For Veggie Chili you can use roasted butternut squash or veggie meat and 2 cans of beans}
Instructions
Place oil in a large pot and place over medium high heat. Add in onion, garlic and red pepper and saute for 5-7 minutes, stirring frequently.
Add in ground meat of your choice, break up and brown, mostly until no longer pink. Next add in chili packet/powder, cumin, Black pepper, cayenne pepper, paprika and salt and sugar; stir until fully incorporated.
Next add in tomato paste, tomato sauce and water; mix well, now add kidney beans. Bring to a boil, then reduce heat and simmer for 20-25mins or until chili thickens and flavors come together. Taste and adjust seasonings and salt as necessary.
Serve and garnish with the works.
