Winter Warmer – Vegan, or not, 2-Bean Chili. The temps are freezing but a sure-fire way to warm things up is with a steamy bowl of chili! This Tex-Mex favorite has something to please the whole family, loaded with protein, fiber and all the veggies you need to keep you going strong through the long, cold winter! You have lots of options to add ground beef, turkey, chicken or soy crumbles. Make this recipe your own!

You will need:

olive oil, butter or non-stick spray
1 onion (chopped, frozen is acceptable)
2 cloves garlic
1 zucchini
mushrooms
1 package soy crumbles or other vegetarian meat substitute (ground meat or turkey can be substituted if desired)
chili powder
cumin
1 can black beans
1 can pinto beans
4 cups tomato sauce
