White Chicken Chili___
3 cans cannellini beans (white kidney beans)
1 medium jalapeno pepper, chopped
3 pablano peppers, chopped
1 lg onion, chopped
1 Tbsp minced garlic
salt and pepper
2 tsp chili powder
1 1/2 Tbsp cumin
4-5 cups chicken broth
1 Tbsp vegetable oil
2 lbs chicken tenders
⢠Cut the chicken tenders into small pieces, removing the tendons. Saute in a skillet with oil, salt and pepper, until no pink remains. Chop into smaller pieces and set aside.
⢠Drain and rinse the beans. Take about half of the beans with 1 cup of the chicken broth and puree them in a food processor.
⢠Saute the peppers, onions and garlic in a large stock pot over medium heat until softened, about 5-7 minutes. Add the cumin and chili powder, and continue to cook for another minute. Then add 3-4 cups of the chicken stock, and the beans. Simmer for 20 minutes.
⢠Add the chicken to the pot, and simmer until heated through.
