THE BEST VEGAN CHILI RECIPE PERFECT FOR MEAL PREP AND FREEZER MEALS | HOW TO MAKE VEGAN CHILI

In today’s video I am share the BEST Vegan Chili Recipe. It is so warm, cozy, and hardy. Plus, it is great for meal prep, and you can freeze it! At the time of me posting this recipe it is Veganuary, and I try to eat more plant-based during this time. And if you are in the same boat, I hope this recipe will be helpful for you to. It captures all the things for winter with it warmth, and its health benefits, from the legumes, the grains, and the sweet potato. This chili is amazing for gut health, and immune support. Recipe
Ingredients
1/2 cup uncooked quinoa (I use red)
1 cup uncooked lentils (I used brown)
32 oz. veggie broth
1 small onion
4-5 cloves of garlic
1/2 red bell pepper
1/2 green bell pepper
1/3 cup fresh cilantro
1 1/4 cup diced sweet potato

SPICES
1 1/2 tbsp chili powder
1/2 tsp Mexican oregano
1 tsp cumin
1 tsp smoked paprika
1/4 tsp cayenne pepper
1/4 chili flakes
1 tsp garlic powder
1 tsp onion powder
salt and pepper

CANNED GOODS
28 oz crushed tomatoes
15 oz can of black beans
14.5 oz fired roasted tomatoes
1 tbsp tomato paste
1 tsp coconut sugar (or 1/2 regular sugar)

1. prep all your veggies, by chopping and dicing. Then set aside.
2. Gather all spices and separate the onion and garlic powder. Set aside
3. In a large pot cook onions with oil, salt and pepper until translucent
4. Add bell peppers and garlic and sauté for 5-7 minutes.
5. add all spices except onion and garlic powder, cook until fragrant
6. Add tomato paste, and cook until incorporated. If the spices and paste start to stick add some water or stock to deglaze the pot.
7. Add Crushed Tomatoes, Fire roasted tomatoes, broth, sweet potatoes, beans, lentils, and black beans. Stir well and bring to a boil.
8. Reduce heat to low and simmer for 45-60 minutes, until sweet potato is fully cooked through.
9. Add fresh cilantro and stir.

Serve with your favorite toppings. I topped with Avocado, sliced jalapeno, and and extra cilantro. Vegan sour cream, and cheese. a On the side you can enjoy with Cornbread, saltines, or tortilla chips
