This delicious Beef Chili recipe is easy and cost effective. I subbed the traditional kidney beans for zucchini, but if you are not worried about counting carbs then add a can of your favorite beans (do not drain) and you’ll have an amazing chili con carne.
The Queso Dip recipe is a crowd pleaser – I served it with low-carb Quest tortilla chips and pork rinds in the video. It also is a great topping for cauliflower as a side dish.
Low-carb Beef Chili by Triciaās Delicious Dishes

Ingredients
Ground Beef, 1 pound (454g / 16.01 oz)
Celery, 1 cup (101g / 3.56 oz)
Onion, ¼ cup (40g / 1.41 oz)
Zucchini, 1 cup (180g / 6.35 oz)
Extra Virgin Olive Oil, 1 tablespoon (14g / 0.49 oz)
Garlic, 1 teaspoon (3g / 0.11 oz)
Tomato Paste, ¼ cup
Tomato, Canned, 1 cup (240g / 8.47 oz)
Beef Broth, Bouillon or ConsommƩ, Homemade, 2 cup (480g / 16.93 oz)
Chili Powder, ¼ cup (32g / 1.13 oz)
Cajun Spice Seasoning, ¼ cup
Thyme, Ground, 1 teaspoon
Jalapeno – 1 fresh (optional)
Salt, 1 teaspoon (6g / 0.21 oz)
Instructions
1. Cook ground beef until browned and reaches recommended internal cooking temperature of 160F. Drain excess grease.
2. In a stock pot, heat olive oil over medium-high heat and sautƩ garlic, onion, celery and zucchini 3 minutes until tender.
3. Add beef stock, tomato paste, canned tomato and spices. Stir until well combined.
4. Add Jalapeno and salt – bring to boil. Reduce heat to low and cover. Simmer minimum 20 minutes stirring occasionally.

Tomato, 1 medium – 2 3/5″ diameter (123g / 4.34 oz)
Green Onions, 1-¼ tablespoon, chopped (8g / 0.28 oz)
Cilantro Or Coriander Leaves Fresh Or Raw Herb, 1 tablespoon
33% Milk fat Whipping Cream, ā
cup
Sour Cream, ā
cup (77g / 2.72 oz)
Cream Cheese, 4 ounce (113g)
Cheddar Cheese, 1 cup, grated (113g / 3.99 oz)

Instructions
1. Begin with 33% heavy cream in a saucepan on medium-high heat. Add sour cream and cream cheese. Continue to whisk 3-4 minutes until smooth. Reduce heat to medium-low.
2. Add chili, tomato, green onion and cilantro. Stir until evenly incorporated.
3. Remove from heat. Stir in cheddar cheese.
4. Squeeze lime and serve!
***Tip: when adding cheese to sauces, always add at the last. Finish cooking the sauce, remove from heat and stir in the grated cheese. This will prevent the cheese from sticking to the bottom of the pan and burning making the sauce have a gritty texture.
