It’s snowing today in Texas and we’re told to expect about 1 to 3 inches of accumulation. My answer to this winter storm is to make a pot of 100% Genuine Authentic Texas Chili in a manner similar to how my mother prepared it. And I’m doing it with beans!
Being the spouse of a cancer survivor (as well as a cancer survivor myself) I understand that good health requires a combination of physical and mental considerations. One way to achieve balance is to enjoy comfort foods – foods that remind you of your mom, siblings, or simpler times. Comfort food will help you relax, relieve stress, and make you happy. Granted, my wife is unable to enjoy a good bowl of chili because of the effect it has on her health condition. Even if she didnāt have severe intestinal damage due to her cancer treatment, I seriously doubt she would eat chili. But Texas Chili is something that I honestly enjoy.
This is the first attempt at making a video in the kitchen, and the first time for my wife to get involved with the channel. She told me that she wants to learn how to do video – and this was my solution for her to practice. We both learned a few things. We need to use better lighting, use an external mic or a lavalier microphone, and shoot the entire thing in on long video (maybe even different angles) rather than small video snippets as done here.
Regardless, this is real Texas Chili. You can adjust it as you prefer – so this is just a starting point. And if you like the chuck wagon of Cowboy Kent Rollins, you might like this version of Texas Chili. I don’t live on the Red River, but I do live near the Enchanted Rock. And this is my type of Enchanted Chili.
