Pepe’s Mushroom and Bean Chili
1 cup of orzo or any small grain pasta
2 tablespoons of olive oil
1 large onion, diced
2-3 cloves garlic, finely chopped
2 cups mushrooms, quartered
1 tablespoon chili powder
1 tablespoon oregano
1 tablespoon ground cumin
1 teaspoon salt
1 teaspoon ground black pepper
1 large bell pepper, seeded and diced
1 cup corn
1 cup Pepe’s red beans, boiled and drained
1 cup Pepe’s black beans, boiled and drained
1 cup tomato sauce
1 can diced tomatoes, undrained
3 cups water
2 cups vegetable broth
Bring a pot of water to boil, add orzo and boil for 8-10 minutes. Drain and set aside.
Heat olive oil in a pan over medium heat. Add onion and garlic; cook 2 minutes. Add mushrooms, chilli powder, oregano, cumin, salt and black pepper; continue to cook 4 – 5 minutes. Stir in peppers; cook for an additional 3 – 4 minutes or until vegetables are tender.
Add the vegetable broth and 2 cups water.
Stir in Pepe’s red and black beans. Bring to a boil. Reduce heat; cover and simmer for 20 – 25 minutes or until flavors come together, stirring every 10 minutes to prevent sticking. You may need to add a little more water ever so often.
Taste and adjust seasoning if necessary. Finally add cooked orzo and continue to cook 10 minutes before serving.
