Here’s how to make these super easy chili cheese potatoes:
1. While you are baking the potatoes, prepare the chili.
2. Sauté the onions until translucent and then add the mushrooms and cook until reduced.
3.Then add the corn, tomatoes, textured vegetable protein (tvp), beans, chili spices, tomato paste, hot sauce and sea salt to taste. Simmer for about 10 minutes.
4. Place your baked potatoes in the pan, slice down the middle and fill with chili. Top with vegan cheese and bake for about 10 minutes @425 degrees (or until the cheese is melted.)
5. ENJOY!!!

**For the “chili spices” use your favourite pre-packaged chili spice or blend!! The hot sauce is totally optional if you can handle the heat!**
