Andhra Style Chicken Chili:

Ingredients For Marination:
Chicken 500 gm
Yogurt 2 tbsp
Ginger garlic paste 1 tsp
Green chili paste 1 tbsp
Turmeric powder 1 tsp
Salt as required

Other Ingredients:
Coriander leaves (chopped) 1/2 cup
Curry leaves 5
Cumin seeds 1 tsp

For Tempering:
Onion (finely chopped) 1
Pomace olive oil 1/2 cup
Green chilies 3
Curry leaves 4
Soy sauce 1 tbsp
Salt as needed

Method:
Mix chicken with curd, ginger garlic paste, green chili paste, turmeric, salt and marinade in fridge for at least an hour. Grind together coriander leaves, curry leaves and cumin seeds to make a fine paste. Set aside. Heat olive oil in a pan and add curry leaves, chopped onions and green chilies. Sauté till the onion is translucent. Now add soy sauce and 2-3 tablespoon of green masala prepared. Mix well. Add the marinated chicken and fry with the green masala mix till the moisture evaporates and the chicken is tender and nicely cooked. Serve hot.

Mughlai Baingan Masala:

Ingredients:
Eggplant (cubes) 500 gm
Pomace olive oil for deep-frying
Clarified butter 4 tbsp
Cumin seeds 1 tsp
Onions (chopped) 1 cup
Ginger garlic paste 1 tsp
Red chili powder 1 tsp
Coriander powder 2 tsp
Turmeric powder 1/4 tsp
Tomatoes (chopped) 1 cup
Lui tomato paste 1/4 cup
Sugar 1/2 tsp
Fresh cream 2 tbsp
Salt to taste

For The Garnish:
Fresh coriander (chopped) 2 tbsp

Method:
Heat the olive oil in a wok and deep-fry egg plant on a medium flame till they are golden brown and keep aside. Heat the clarified butter in a pan add cumin sauté along with onion and sauté until light golden then add ginger garlic, chili, coriander, turmeric powder along with tomatoes, tomato paste, sugar, cream, salt stir and then add fried eggplant and serve hot with coriander.
