This is my back in the day, budget New Mexico Green Chili Stew Dinner Recipe that is quick and easy to make. When we had to stretch our food budget while living in New Mexico for most of the 1990’s this was on our table a few times a month.
WHAT YOU NEED:
1 Pound of Ground Beef or Pork cubed
1 Tub of Green Chilis from New Mexico
3-4 Cups of Beef Broth or Chicken Broth your choice
1 White or Yellow Onion
2 Big Tea Spoons of Garlic
1 Can of Diced Tomatoes with Green Chili
2 Russett Potatoes
Pepper
Season Salt
Total prep time is about 15 minutes and then about 15 minutes of cooking time.
