It was a chilly, stormy day – so I made my favorite chili ever to warm me up 🙂 This chili is FULL of amazing veggies, and totally customizable to where you live and what you like! I’m so pleased, after all of these years, to see this recipe that I love making come together on video. Please enjoy it as much as I do!

My Favorite Chili Recipe
Serves 9
INGREDIENTS
3lbs ground beef
2 medium yellow onions, diced
4 cloves garlic, minced
2 jalapeno (or other hot) peppers, minced
2 carrots, chopped
2 stalks celery, chopped
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1/2 green bell pepper, chopped
2 cups sliced mushrooms
1 tablespoon olive oil
3 (28oz) cans diced tomatoes
1 (12oz) can black beans
1/4 cup chili powder
1 teaspoon ground cumin
2 tablespoons dried oregano
2 bay leaves
1 tablespoon salt
1 tablespoon ground black pepper
Any additional veggies you desire? Throw them on in!
METHOD
1. Heat the olive oil in a deep pot over medium-low heat. Stir in the onion and caramelize. This takes a while, you want them dark golden brown and sticky. The stuff that sticks to the bottom of the pot is FLAVOR GOLD.
2. While your onions are caramelizing, chop all of your veggies.
3. Onions are ready! Stir in garlic and jalapeno peppers until fragrant.
4. Mix in all seasonings: bay leaves, cumin, oregano, chili powder, salt, and pepper.
5. Mix in veggies: carrots, celery, and bell peppers. Cook until tender.
6. Mix in black beans, mushrooms, ground beef, and tomatoes.
7. Add water to barely cover the top of the ingredients in the pot.
8. Bring to a simmer.
9. Cook for 45 minutes to 1 hour.
10. Season to taste & enjoy with your fave chili garnishes!
