🌶2 lb ground beef (or chicken or turkey)
🌶1 tbsp olive oil
🌶2 onions, chopped
🌶6 cloves garlic, minced
🌶1 jalapeño, finely chopped🌶4.5 tbsp chili powder
🌶5 tsp cumin
🌶1.5 tbsp paprika
🌶2 tsp smoked paprika
🌶1 tbsp garlic powder
🌶1 tbsp onion powder
🌶1 tsp cayenne pepper (optional for 🌶)
🌶2.5 tsp black pepper
🌶2.5 tsp sugar🌶5 tsp dried oregano
🌶1 tbsp allspice
🌶1/2 tsp nutmeg
🌶1 large juicy chopped tomato (or 1 (15 Oz) can of diced tomatoes)
🌶1 (6 Oz) can tomato paste
🌶1 (15 Oz) can crushed tomato
🌶1 (15 Oz ) can tomato sauce
🌶2 (15 Oz) cans kidney beans
🌶1 (15 Oz ) can black beans
🌶1 (15 Oz) can pinto beans
🌶4 cups unsalted chicken broth (or water)🌶salt to taste
1. Add olive oil into a large pot on medium heat and sauté onions, garlic, and jalapeño until softened. (For instant pot, have the pot set to the “sauté” option). Add in tomato paste and toast it for a few minutes until it deepens in color.
2. Add in ground beef and break it down into very small pieces. Add in all the spices and mix them in while continuing to break up the meat.
3. Once the ground beef is cooked through, add in the chopped tomato, tomato sauce, crushed tomatoes, and half the chicken broth. Stir in the beans then bring the chili to a boil and simmer on medium/ high heat for 10 minutes while pot is covered (if using Instant Pot, leave the pot uncovered and turn it to the “chili/bean” option. Let it simmer for about 10 minutes).
4. Add in remaining chicken broth and reduce heat to medium/low. Let the chili simmer for another 30-40 mins! (instant pot: add in remaining chicken broth and lock the lid on. Set the time to 12 minutes on the “chili/bean cook setting. Then uncover and mix well before serving!)
5. Optional toppings include: shredded cheese, avocado, sour cream, sliced green onions, lime wedges, sliced jalapeño. Enjoy!
