CHILLI CHICKEN/ चिली चिकन

RECIPE
Prep. Time – 15 minutes
Cooking Time – 15 minutes
Serves – 2 people

INGREDIENTS
1- Chicken – ½ kg
2-Onion – 1 medium size cut into cubes
3-Garlic – 1 spoon minced
4-Ginger – 1 inch cut into julienned
5-Green chilli – 3 cut into half
6-Red capsicum – ½ cut into cubes
7-Green capsicum – ½ cut into cubes
8-Tomato sauce – 2 spoon
9-Red chilli sauce – 1 spoon
10-Green chilli sauce – 1 spoon
11-Soy sauce – ½ spoon
12-Vinegar – 1 spoon
13-Cornstarch – 4 spoon
14-Black pepper – ½ teaspoon
15-Spring onion and white sesame seeds for garnishing
16- Egg – 1
17-Salt to taste
18-Oil to fry

METHOD

STEP-1: MARINATING
Season the chicken with salt and pepper. Add 1 spoon of vinegar, 3 spoons of cornstarch and 1 egg. Mix well and marinate for 15 minutes.

STEP-2: DEEP FRYING
Heat oil in a deep kadhai. Once the oil is hot enough, start adding chicken pieces and deep fry for 5 minutes till golden brown both sides. Be careful to not over-fry the chicken. Take chicken pieces out, keep them in a tissue paper to absorb extra oil.

STEP-3: STIR FRYING
Heat another pan with 2 spoons of oil. Add garlic, ginger, sliced green chillies, onion cubes, green and red capsicum cubes and spring onion to it. Stir fry on high heat for 2 to 3 minutes. Add all sauces.
Take 1 spoon of cornstarch in a bowl. Add ½ cup of water and make a mixture. Add this to the pan and cook it for 2 minutes till the sauces become thick.

STEP-4:
Add fried chicken to the same pan and some extra black pepper powder. Stir fry on high heat for 1 to 2 minutes. Switch off the flame. Top with some spring onion and toasted white sesame seeds.

Serve the Chilli Chicken hot with Fried Rice or Roti or Paratha.
