This healthy vegetarian chili recipe is so delicious, super easy and takes basically no time to make!

INGREDIENTS:
• 3 tbsp oil
• 1 onion, finely chopped
• 2 large carrots, finely chopped
• 1 red pepper, finely chopped
• 3 garlic cloves, minced
• 1 tbsp chili powder (or to taste)
• 1 tsp ground cumin
• 1 tsp oregano
• 1 can crushed tomatoes
• 1 can cooked kidney beans
• 1 can corn, thawed and drained of excess water
• 1 tsp salt (or to taste)
• 1 tsp ground black pepper (or to taste)
INSTRUCTIONS:
1. Heat the oil in a large pan or skillet over medium-high heat. Sauté the onion until softened, about 2-3 minutes, then add the carrots and fry them for about 3-4 minutes.
2. Add the bell peppers and sauté for two minutes.
3. Then add sweet pepper, cumin, chili powder, oregano and stir well to combine and cook for another 2 minutes. Add the garlic.
4. Now add the crushed tomatoes and stir well.
Reduce the heat and sauté this for another 3 minutes.
5. Add the kidney beans and the corn and give it a good stir
6. Cover with a lid and simmer for 15 minutes.
7. Season generously with salt and pepper (to your taste).
Sprinkle with feta and hot peppers or chopped green onions. if desired and serve with bread, rice, couscous (bulgur) or potatoes.
