Spice up your February with our Minced Beef Chili using Erin Oxtail Simmer Soup!
Preparation Time – 10 minutes
Cooking Time – 30 minutes
Servings – 4
Ingredients
1 large onion, finely chopped
1 red bell pepper, diced
2 garlic cloves, minced
1 tbsp olive oil
1 heaped tbsp chili powder
500g lean minced beef
300ml hot water + 3 tbsp Erin Oxtail Simmer Soup
400g can of chopped tomatoes
1 square dark chocolate
2 tbsp tomato puree
1 small can of kidney beans, drained and rinsed well
Rice, Sour Cream or Plain yogurt, & Grated Cheese to serve
Directions
Add oil to a pan over a medium heat.
Add onion and cook for 5 minutes.
Add red pepper, garlic, and chili powder, and cook for a further 5 minutes.
Add meat to the pan and cook for 5 minutes, breaking it up and mixing it up with onion and spice mixture.
Mix together water and simmer soup in a jug.
Add simmer soup mixture, chopped tomatoes, tomato puree and dark chocolate to the pan. Stir well to combine. Once the chocolate is melted add the kidney beans.
Bring to the boil and then simmer for 20 minutes.
Season to taste with salt.
Serve on a bed of rice topped with sour cream or yogurt and some grated cheese if desired.
