With the busyness of the school year and fall weather on its way, my Chicken Chili is the perfect meal to throw in your slow cooker.
Jen’s Chicken Chili

2 cans fire roasted tomatoes
1 pound boneless, skinless chicken breasts
2 cups corn
2 cups pinto beans
¼ cup cilantro
1 small onion, chopped
3 cloves garlic, minced
2 teaspoons each: cumin, chili powder, coriander, salt
½ teaspoon pepper
Tortilla chips and shredded cheese for serving, if desired.
Place all ingredients in slow cooker. Cook on high for 4 hours. Remove chicken and shred. Mix shredded chicken into chili.
Serve with Cast Iron Skillet Corn Bread or tortilla chips and shredded cheese, if desired.
