Recipe 200 | Chilli oil recipe | how to make chilli oil | hot oil | Infused oil
Chilli oil is widely used in Chinese cuisine. It adds flavor, taste and awesome aroma to any dish. You can get it online or at shops too. But I am sure nothing comes close to the oil you make at home using all the ingredients in your kitchen. At Desilicious kitchen, we have modified and adapted the Chinese recipe to suit Indian recipes and taking into consideration the easy availability of ingredients. You can use this awesome oil in any of your recipes, be it fried rice or curries or salans.
RECIPE:
2 star anise
1/2 tsp cloves
1 stick cinnamon
4 black cardamom pods& 2 green cardamoms
2 bay leaves
1 tsp black peppercorns
1/2 cup red chilli powder
1.5 tbsp white sesame seeds
2 tsp Himalayan pink salt
4 pieces garlic
small piece ginger
3 sticks green onion
3 cups oil
2 tbsp apple cider vinegar
Directions:
1. Add the red chilli powder and salt to a wide mixing bowl. Keep aside.
2. Heat a pan. Keep flame medium. Toast the sesame seeds, star anise, cloves, peppercorns, cinnamon stick, cardamom, and bay leaves on medium heat for 2 minutes.
3. Add the toasted spices to the red chilli powder and salt in the mixing bowl.
4. Roughly chop the garlic, ginger, and green onions
5. Pour the oil into a pan and add in the garlic, ginger, and green onions
6. Heat the oil on medium. When it starts to bubble, turn the heat down to low and simmer for 8 to 10 minutes, taking care not to burn the ingredients.
7. Carefully strain out the oil with a sieve while pouring it on the salt, chilli powder and toasted spices in the bowl.
8. Add the vinegar into the bowl.
9. Give it a stir. Now let it rest for at least half a day so that the oil gets infused.
10. Use this awesome infused chilli oil in a variety of recipes for flavor, aroma and taste!
