To chop:
Start by cutting the chilli in half lengthways and trim the ends. Scrape out the seeds and then cut the chilli crossways into 2 equal pieces. Place the two halves on top of each other and cut them lengthways into fine strips. Turn the chillies 90 degrees and finely dice.
To slice:
Hold the chilli firmly on the board with your fingers curled into a claw shape. Finely slice the chilli into small, equal rounds moving your hand up the chilli as you go.
Tips:
The heat of a chilli comes from the membrane ā the white part surrounding the seeds, so if you prefer your dish to be milder, scrape this part away when deseeding the chilli.
Store fresh chillies in the fridge in a paper bag for up to two weeks. Always bring them to room temperature before using, because the cold tempers the flavour.
To determine a chilliās hotness, test just below the stem ā the tip is usually the mildest part.
Remember to always wash your hands thoroughly after chopping chillies as they can irritate your eyes and skin.
Look for bright chillies free from any soft spots or blemishes. Store in the crisper for up to one week.
