Besan means chickpeas flour and mirch refers to green chillies. You can take any type of green chilli – hot dark green or mild light green or thick ones like Bhavnagar mirch to prepare this besan bhuni mirch. Besan ki bharwan mirch means stuffed green chillies. These chilli fries are chillies stuffed with sauteed besan and spices and salt. They taste yummy and go well with rotis or bread or rice.
Prep time- 15 minutes
Cooking time- 10 minutes
Ingredients-
Green chili- 200gm
Chickpeas flour / Besan- 1/4cup / 4 tbsp
Oil-7 tbsp / about 1/3 cup
Turmeric powder-1/4 tsp
Cumin powder- 1 tsp
Chilli powder-1 tsp
Coriander powder- 1 tsp
Fenugreek /Methi powder 1 tsp
Mustard powder 1 tsp
Fennel / saunf powder-1 tsp
Rock salt- 1 tbsp
Dry mango powder-1.5 tbsp
Lemon-1
Asfoetida- 1 tsp
Procedure :
Hold a knife like a pen and make a slit in the middle of each green chilli.
In a bowl add 1/4 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp cumin powder, 2 tsp coriander powder, 1 tsp fennel powder, black salt 1 /2 tsp, 1.5 tbsp dry mango powder. Mix all the dry spices and keep them aside
Heat 2 tbsp oil
Add 1/4 cup besan
Keep flame very low
Mix and stir continuously until it turns golden. Break lumps if any.
Switch off the gas
Now add the prepared dry masala.
Mix and stir continuously with flame off, but using the heat in the pan and the besan.
Add salt as needed and 1 tsp asafoetida
Now fill in the slit of each chilli with the prepared mixture, taking care not to stuff it with too much.
There will be still a little masala left.
Heat oil in a pan. Add the stuffed green chillies.
Take care not to overcook the chillies.
Add the remaining dry masala on top of the chillies
Mix well for about 2 minutes
Switch off the flame
Add lemon juice
Remember the chillies are not fully cooked
After they cool down refrigerate and use for at least 7 days
