For my Meatless Monday, I made this delicious enoki mushrooms for lunch.
Enoki mushroom health benefits
On top of tasting delicious and adding amazing texture to dishes, enoki mushrooms are a rich source of vitamins and minerals, making them one of the healthiest cultivated vegetables in the world! They are a good source of vitamins B3, B5, B1 and B2 as well as phosphorus, iron, and copper, and a range of amino acids.
Enoki are also a good source of fibre, as well as antioxidants such as selenium, which are said to reduce the risk of heart disease, asthma, and even certain types of cancers. The antioxidant-rich enoki also boosts the immune system and has been used in conventional Chinese and Japanese medicine as a tonic for liver infection, elevated cholesterol levels, stomach ailments and hypertension
