Chili Lime Short Ribs (SERVES 4)
INGREDIENTS:
1 1/2 pounds Certified Angus Beef ® flanken-style short ribs (about 1/4-inch thick)
2 tablespoons light olive oil
1 small yellow onion, diced
4 garlic cloves, sliced
1 tablespoon salt
1 tablespoon chili powder
1 tablespoon of chipotle powder
1 tablespoon ground cumin
1/2 cup chopped fresh cilantro
1 lime zest and juice
1 orange zest and juice
1 Mexican lager, chilled (or 1 cup of Beef broth will work as well)
INSTRUCTIONS:
1. Chop the onion finely and then press garlic into the mixing bowl. Stir in spices and salt. Fine chop cilantro and put in mixing bowl as well. Finally pour beer or broth into the mixing bowl
2. Put beer marinade in a gallon zipper bag with short ribs. Marinate refrigerated for 3-12 hours, depending on how strong you prefer the marinade flavors.
3. Preheat grill or cast-iron skillet (regular skillet will work to just make sure you have your kitchen hood on high) to high heat. Remove short ribs from marinade, discarding excess marinade. Pat dry with paper towels and sear each side over high heat for about 3 minutes per side. Transfer ribs to a platter, loosely cover with foil, and allow to rest 5 minutes before serving.
