Vegetarian Chili with Garlic Butter Baguette / Quick and Easy Protein Rich Vegetarian Chili Recipe /Prepared with soya chunks & tofu/
Rich in protein
Ingredients
1/4 cup olive oil / cooking oil
1 Onion chopped
1/2 cup chopped celery
1/2 cup chopped carrots
4-5 Garlic cloves minced
3-5 Green chilies paste
1 cup Soya chunks soaked in warm water
15.5 oz can of Red kidney beans
15.5 oz can of Black beans
1 can diced tomatoes/ 3 tomatoes chopped
6 oz Tofu
Spices
3 teaspoons of Red chili powder
1 teaspoon of Cumin powder
1/4 teaspoon of Garlic powder
1/2 teaspoon of Onion powder
1/4 teaspoon of freshly ground Black pepper
1 teaspoon of freshly ground Fennel seeds
2 teaspoon of Salt or as per taste
2 cups of water
1/4 cup shredded Cheddar cheese
1 Baguette
For Garlic Butter
4 sticks is Salted Butter room temperature
Lemon Zest of one lemon
1/4 cup Cilantro ( coriander leaves) finely chopped
1/4 Parsley finely chopped
Salt as per taste
1 teaspoon of Freshly ground Black pepper

Vegetarian Soya Chili dish is rich in protein.
Chili is generally served with Garlic bread or toast.
