Lil Ma’s Spicy Beef Bean, and Beer Chili, with a Twist!

My spicy chili stew contains coffee, bacon, lean ground beef, chili peppers, tomatoes. Some other ingredient’s include garlic, onion, cumin, oregano, and a hint of sweetness.

Ingredients:
· 2 pounds lean ground beef
· 6 strips uncooked bacon, chopped
· 1 large yellow onion, diced
· 1 green bell pepper, diced
· 1 red bell pepper diced
· 4-5 garlic cloves minced
· 1 cup of strong coffee
· 1 (12 ounce bottle) dark beer
· 2 ½ Tbsp tomato paste
· 1 28 ounce can crushed tomatoes
· 2-3 15 ounce cans pinto beans, drained and rinsed (or use your favorite beans)
· 1 Tbsp Worcestershire sauce
· 2 jalapenos or chili peppers (chopped)
· 2 Tbsp brown sugar
Spices:
· 1 bay leaf
· 2 Tbsp chili powder (or to taste)
· 1 Tbsp ancho chili powder
· 1 ½ tsp smoked paprika
· 1 Tbsp dried oregano
· 1 Tbsp garlic powder
· 1 Tbsp onion powder
· 1/8 tsp ground cinnamon
· 1 Tbsp ground cumin
· 1 tsp ground coriander (you can omit if you don’t have on hand)
· 2 tsp salt, plus more to taste
· black pepper to taste
· ¼- ½ tsp cayenne (or to taste)

· You can serve with rice, salad, and your preferred toppings: sour cream, shredded cheddar/Monterey jack, chopped green onions/cilantro and fresh lime.

Beer can be replaced with beef broth. (although, I highly suggest using the beer if possible)

Any ground meat will work in this recipe.

You can substitute one chili powder for the other, or simply use traditional chili powder. I like to use both!

Instructions:
1. Place chopped (uncooked) bacon in a large pot or Dutch oven and cook over medium heat until crisp and cooked through. Remove bacon to a paper towel lined dish and drain all but 2 Tablespoons of grease.
2. Add onion and bell peppers and cook until softened, about 5 minutes.
3. Add beef, and salt. Break apart with a wooden spoon as it browns. Once meat is partially browned (about 50%) Add garlic and cook until fragrant (about 1 minute).
4. Add bay leaf, sugar and all spices (chili powders, paprika, cumin, onion powder, garlic powder, black pepper, salt, oregano cinnamon, cayenne pepper, coriander) and stir well. Cook for about 3 or 4 minutes.
5. Stir in tomatoes, tomato paste, beer, and coffee. Simmer for 30 minutes.
6. Add all remaining ingredients — beans, Worcestershire sauce, the chili peppers; your cooked bacon and stir well. If mixture becomes too thick, add a bit more water.
7. Bring to a boil and stir frequently.

Reduce heat and simmer, stirring occasionally. Simmer for at least 30 more minutes to allow all the flavors to truly develop. Garnish and serve.
